Finningers Catering Service is proud to announce that Clarence Franklin, Sr., has joined our staff as Executive Chef. Clarence brings over twenty years of experience in the culinary field having prepared fine food in some of St. Louis' premier kitchens.
He has worked in places as different as the Missouri Athletic Club, Whittemore House and daily meals for senior centers. His range of experience started 27 years ago when he began to cook professionally. When Clarence realized cooking would be his life's work, he enrolled in school for the culinary arts and focused on becoming the best. "School taught me technique – Life has taught me to be the cook I am today", Clarence states. "Each day brings a new opportunity to explore the many facets of the art of cooking. No meal is too small. No guest list too big. No menu or recipe too exotic. Creative cooking is a challenge and I am ready for it." Traditional, regional or down-home favorites, piquant sauces, soups, stews and cobblers are all specialties.
The common thread weaving throughout Clarence's career is his deep desire to make the dining experience for everyone exciting and unforgettable. He is passionate about food – a real food aficionado. He loves the whole process: selecting the menu, researching the recipes, choosing the freshest ingredients and preparing the food as if it were a painting to be observed and appreciated, but with the added benefit of being consumed, bite by juicy, delectable bite.
Clarence's credo and mantra is, "I want to cook food that pleases. Anyone, of any background or appetite can rely on me to give them what they want in a meal."
